I always cook buttered corn whenever we crave for a corn dish so for a change, I tried cooking the corn differently by adding more herbs and spices to add extra flavor to it. Best served with a cold bottle of beer! (lol) Enjoy!
1 cup ears corn.
2 tbsp olive oil
1 large red bell pepper diced
1 large white onion diced
1 stick unsalted butter
1 tsp parsley
1/4 cup quick melt/ mozzarella cheese
Salt and pepper to taste
- Mix the butter, corn, red bell pepper and onions.
- Drizzle with Olive Oil and season with salt, pepper and parsley.
- Put the cheese on top of the corn mixture and let it sit in the oven for 5-10 minutes.
